Lishan tea is one of the highest quality high-mountain teas produced in the Lishan region of northern Taiwan, 2,200 meters above sea level. Lishan's soil is rich in nutrients and produces many highland vegetables and fruits such as pears.
The temperature in the tea gardens rises in the morning due to the strong morning sun, and in the afternoon the tea gardens are completely covered in fog. The fog does not clear until nightfall, so the temperature remains low and does not rise. Lishan tea leaves absorb the abundant sunlight during the day and produce nutrients necessary for growth, such as amino acids and carbohydrates. These nutrients are the components that make up the taste of tea.
Because the temperature is low at night, the tea leaves store nutrients inside the tea leaves without consuming them. Because this process is repeated, Lishan tea leaves grow into tea leaves that are small but full of umami ingredients.
Harvesting is extremely difficult due to the high altitude. Therefore, Lishan tea is only harvested twice a year, in May and December. The color of the tea water is a beautiful pale golden color no matter how many times you brew it. It also has a nice fruity citrus scent.
